Our little distillery is tucked away among the houses on the corner of Linton Street and Mary Street. It is here that our gin is handcrafted in small batches using traditional methods in our beautiful 140-litre copper still, which stands proud for all to see in The Hanbury, Islington.
Hanbury is a premium London Gin inspired by London’s rich gin history and the heritage and character of Islington.
Hanbury Gin was born with one hope: to develop a new London Gin with greater flavour, character, and quality. As a result, Islington’s newest distillery opened in 2021.
We take great pride in the quality of our gins. Every batch of our gin is tasted by an expert panel to ensure that there are no compromises or shortcuts. Our gin is slowly distilled by hand, by real people with real passion for gin.

Our Still
Step foot into the Hanbury distillery and your eyes will immediately be drawn to the stunning copper still at the heart of it all. Éace was named after one of our founders' two daughters, combining their names for a wonderfully unique moniker that perfectly represents what makes Hanbury Gin so special; high quality spirits made with love. This elegant marvel is built with extraordinary care, after all, part of having a good gin is about getting the most flavour out of its ingredients during distillation. Luckily for us, our master distillers are always there to oversee that process every step of the way with Éace at the heart of it all! She's the secret ingredient that makes Hanbury Gin so special. The Hanbury Gin Process
This is a hands-on process, from the measuring out of the botanicals to running the still. Every step of our process is followed with extreme care and precision to ensure that nothing is compromised. We don't push our ingredients too far to maximise the bottom line; we prefer to maximise the taste of our gin. Our method exposes more of our liquid to more of the copper still, which leaves its mark on the distinct flavour of our gin.
Botanical Selection
Our botanicals are carefully weighed out by hand for every single batch of our gin, adding just the correct quantity of botanicals for the amount of liquid in our still.
Distillation Begins
After we fire up Èace, we add our liquid to the still along with our carefully weighed out botanicals. Our botanicals are steamed like tea in the liquid to extract their essence. The process becomes purer as it continues.

The first compounds released in our still are called the heads. We remove these and collect only the heart of the gin.
measuring the strength
Just before bottling, we add the best London Water to cut the spirit to the proper proof. Our gin is bottled at 40% ABV.
Bottling & labelling
When we say "by hand," we mean it. Every single bottle that leaves our distillery has been bottled, labelled, and packed at our distillery in Islington. We handwrite every batch number and bottle number on each of our gins.
